Pak Choy Side Salad

Serves Two

This is a quick, tasty side salad which goes perfectly with beef or lamb.

Ingredients:

  • 3 Pak Choi bunches
  • 1 whole white Onion, finely chopped
  • 1 tbsp Olive Oil
  • 2 cloves of Garlic, finely diced
  • 1 whole Zucchini, cut in half circles
  • 5 tbsp Soy Sauce
  • 2cm Ginger, finely diced

Step 1: Fry the diced onion in olive oil until soft and add two cloves of garlic, diced. Add cut zucchini and pak choi with the heads cut off.

Step 2: Once the pak choi has wilted, pour 5 tbsp of soy sauce over top and add the finely diced ginger.

Warm Green Bean & Rocket Salad

Serves Two

Ingredients:

  • 200g Green Beans
  • 1 small Red Onion, finely chopped
  • 1 tbsp Olive Oil
  • 2 tbsp Maple Syrup
  • Large handful chopped Rocket
  • 2 tbsp Sunflower Seeds/Pinenuts
  • Half Fresh Lemon

Step 1: Boil the green beans for three minutes, remove, drain and cold water over them immediately to maintain crispiness.

Step 2: Fry chopped red onion in oil until translucent and add maple syrup and green beans and keep on heat for a few minutes.

Step 3: Place the rocket into a bowl and add beans, sunflower seeds or pine nuts and mix. To finish squeeze the juice of a lemon over top.
